Bitemeat biltong is gross. It is not authentic biltong, the flavor profile is off and feels and tastes like I'm eating rubber. As a South African I find this "biltong" to be utterly disrespectful and should not be allowed to be labeled as such. Call it jerky or whatever but don't dishonour South African tradition.

Flavor may be subjective, but taste and texture are not. That's the equivalent of saying a vegan meat is the same as the real thing. You claim to be South African and if you are, you should be ashamed of yourselves. Either you have not lived in South Africa for any significant amount of time or you are truly disingenuous. You will not find a biltong shop in South Africa that produces a rubbery jerky type product like yours. Do yourself a favour and Google a recipe for traditional biltong and you will see both how the product should look and if you tried the method, how it actually tastes including the texture. In fact, go to your local South African shop and see what real biltong is. Your response is even more infuriating that you won't admit that you've created a beef jerky and labeled it "Biltong".

Taste and texture can be very subjective, especially with a product like biltong where dryness, cut and seasoning vary widely from producer to producer. Our biltong is made by South Africans using a traditional process that focuses on a lean cut of beef and a simple spice blend, without artificial flavour enhancers or additives such as MSG that you get on common spice blends. This naturally results in a firmer texture and a more subtle flavour profile than some styles people may be used to. The BBQ flavour is uncommon though, especially back in SA and is a variety that we created due to local demand and taste preferences.
Being South African, we fully respect the biltong culture and the strong opinions that come with it. While our approach may not align with everyone’s expectations, it is authentic to our roots and the way we’ve been making biltong for over 22 years.
